
Sambal is made from ground red chili peppers flavoured with other ingredients to produce different varieties. Used for sauces, grilled meats, fish and vegetables.
Sambal Oelek (Ulek) made from red chili peppers, vinegar, salt and sugar. This sauce is named for the specially shaped Indonesian pestle, the ulek-ulek, used to grind the peppers.
Other varieties are
Sambal Bajak : with shallots
Sambal Trassi (Terasi) : with tomato, shallots, shrimp paste, lime juice
Sambal Lado : with green chili, shallots, dried anchovies, lime juice
Sambal Kachang : sweet, mild peanut sauce, salads.
