
Anytime is a good time for a Squid Salad
Ingredients
Lettuce leaves with lemon juice
Mint leaves, torn
Zest one lemon
2-3 garlic cloves
Olive Oil
Salt. pepper to taste
Calamari rings
Method
Toss some lettuce leaves with lemon juice. In another bowl, toss mint leaves, garlic cloves minced, zest of lemon.
Heat oil on high, toss calamari rings for one minute, season quickly with salt and pepper. Add the mint, garlic mixture, toss a further one minute or less, until the calamari are just white.
Taste for seasonings, place on top of the dressed lettuce leaves, serve immediately with washed bean sprouts, thin slices red or green capsicum and fresh mint leaves.
