Patina de Piris – Souffle of Pear

Ancient Roman Recipes

  • 1kg pears, peeled, cored, chopped
  • 6 eggs
  • 4 tblsp honey
  • 100ml Passum (sweet grape juice)
  • a little bit of oil
  • 50ml Liquamen (useĀ  fish sauce or 1/4 tsp salt)
  • 1/2 tsp ground cumin
  • ground pepper to taste

Method

  • Mix pears, pepper, cumin, honey, Passum, Liquamen and oil.
  • Whip eggs with a fork and place all in casserole.
  • Cook approx 30 minutes on small to moderate heat.
  • Serve with sprinkle of pepper.
