Vinegar comes from the French vin aigre, meaning “sour wine.” As part of a marinade or dressing, vinegar brings out the essential flavours of any meats or vegetables. It’s a common ingredient in chutneys and pickles of any variety.

There are several types of cooking vinegars:

Wine vinegar – authentic wine vinegars are formed by fermenting wine in oak barrels over several months – sherry vinegar, champagne vinegar and balsamic vinegar

Cider vinegar – made from apple pulp

Malt vinegar - a strong vinegar used for pickling

Spirit vinegar – the strongest vinegar, it contains some alcohol

Rice vinegar – popular for Asian cooking, many flavours and varieties

* One pound of sugar to every pint of vinegar.
* Cut the quinces in very small pieces, put in a preserving pan and nearly cover with vinegar.
* Add spices and boil until tender.
* Let cool and the pickle is ready for use.
